Bring a pot of water to a boil. Add the cut sweet potato and cook for about 10 minutes or until you can easily poke it with a fork. Transfer the sweet potato to a bowl and mash it with all the remaining ingredients.
Warm a pan over medium heat and add 3 tbsp oil. Form patties from the dough using wet hands. Pan fry them on each side for about 4 minutes or until both sides are dark brown and crisp.
Serve with a salad as an appetizer or on a bread with veggies and sauce.
