Fresh Quinoa Salad
Fresh and protein packed salad! Perfect as a side at a BBQ or any other dinner gathering.
- 1 cup quinoa
- 1 cucumber
- 2 tomatoes
- 1 bell pepper
- 1 can black beans
- 1 cup corn
- 2 tsp garlic powder
- 3 tbsp nutritional yeast
- 1 lemon juice and zest
- 1 spring onion
- 1 handful cilantro
- 1/3 cup toasted sesame seeds
- 1/3 cup toasted sun flower seeds
Start by adding a splash of oil to a cooking pan/pot, add the quinoa and cook while stirring over medium/low heat until the quinoa starts to pop and smell nutty.
When the quinoa turns light brown add the water or veggie stock,
cover the pan or pot with a lid and let it simmer for about .... minutes.
Once done fluff the quinoa with a fork and let it cool off.
Add the cooled quinoa to a bowl and to this add all the ingredient and mix well.
