So what do vegans eat throughout the day? Today I’m starting a new segment where every once in a while I’ll be sharing a full day of eating, the day won’t necessarily be planned, this way it stays an honest reflection of my eating habits. I’m one of many who are doing these type of posts, sharing my personal dietary choices.
If you’re following me on Instagram you might know I started a little “spring clean”, for the body, mind & soul. So I’m avoiding over processed foods and for some reason my body is also naturally telling me to reduce my gluten and oil intake. Having said that, I do add some oils (mostly for taste like sesame oil) to some of my dishes, including today.
Today was quite cold, yet for some unknown reason I had a smoothie bowl for breakfast. I don’t often have smoothie bowls for breakfast, but the cravings were real! I had a mango & blueberry smoothie with some non dairy yoghurt, oat milk, maca & cacao powder. I topped it with a energy bite and some additional toppings.
After this cold start of the day I knew lunch had to be something warming! So I made myself a nice and warming broth packed with veggies and wholesome flavours coming from miso, tamari & aromatics from the garlic and onion. To finish it off I added some Unicorn Noodles and sesame oil (there it is), to create a whole some bowl to keep me warm throughout the day.
In between I snacked on an energy bite (recipe coming soon), these little balls pack a punch, and they are a great way to satisfy any sweet cravings that might come.
During the evening Celina and I went to the opening of Luvi, a new and cosy yoga school, click the link to read more about them! I’m definitely going for practice some time soon. where they had some healthy snacks like veggies w/ hummus, date balls & dumplings, and I ate all, with moderation of course! I also had a glass of (vegan) red wine (maybe two).
After a long day I decided to have a very late dinner consisting of the vegetable packed miso soup while finishing the last episode of altered carbon, have you seen that show? It’s fantastic, I can’t wait for the second season to unfold even more secrets… Ok getting off topic, but late dinner did me good! I stuffed the soup with a block of soft/firm tofu, such a great source of protein!
So looking back on the day it basically consisted of smoothies, veggies and soup w/ two glasses of wine. The wine being the exception as I’ve decided not to drink apart from special occasions, this is key during my spring clean.
